WORLD GREATEST CHEESECAKE RECIPE. Everyone says “my cheesecake is the best” but mine really is!

My criteria for a superb cheesecake: Must be creamy and not stick to the palate

So here we go-world greatest cheesecake recipe.
So easy to prepare even a kiddie could do it!

 you will need a 24 cm spring form mold

Better still if you can find a round Teflon mold of the same dimensions (takes a bit of the work out)

If using the spring form, grease it with butter (I hate baking spray) and line the sides and base with baking paper.

Use the mold itself to trace an outline on the paper to cut a disk for the base. Cut two disks.

With the Teflon mold you only need 1 disk. No sides or base. The extra disk is to place on top of the cheesecake mixture once the mold has been filled (prevents browing in the oven)

Ingredients:

1.5 kilo smooth cream cheese such as Philadelphia
3 whole eggs
6 egg yolks
365 gm granulated sugar
1 table spoon vanilla extract (not essence which is horrible and clear. extract is black)
60 gm corn starch
200 ml pouring cream

Method:
Just add all of the first 5 ingredients into the bowl of your food mixture
In a separate small bowl mix the cornstarch and cream until smooth then add to the main mixture.
Beat at medium speed with the paddle attachment until smooth.
Fill the mold
Place the extra paper disk on top
Bake at 120C for 1hour and 20 minutes

Note: All ovens are different. Look in on your cake after an hour.
It should be firm but slightly wobbly. You may have to bake less or more than the 1 hour 20 minutes.

Let the cheesecake cool completely, preferably overnight. If you are in a hurry put it in the freezer.

If you want a biscuit base, smash Marie biscuits or Graham crackers in a zip lock bag with a rolling pin to obtain coarse crumbs.

Combine the crumbs with melted butter until it stays together when you clutch it in your hand.

Pat the mixture on top of the cheesecake (this will be the bottom when you turn it over)

Turn the mold over using a plate lined with baking paper Unhinge if spring form or gently peel away the Teflon.
